Seafood Seasoning

This seasoning combination gives food a hot, spicy Cajun flavor. I use it on mushrooms, vegetables, tofu, and popcorn.

3 tbs. celery seed
3 tbs. paprika
2 tbs. wild or commercial mustard seeds
2 tbs. cloves
2 tbs. bayberry leaves or bay leaves
2 tsp. mace
2 tsp. cardamom
2 tsp. dried ginger
2 tsp. black caraway seeds or ordinary caraway seeds
2 tsp. Cayenne hot pepper
1 tsp. wild carrot (Queen Anne's lace) seeds
(Caution: Make sure you’ve identified this plant correctly—it has poisonous look-alikes) or 2 tbs. caraway seeds

Grind all non-powdered herbs together in spice grinder, and mix with powdered herbs. Store in a tightly closed jar. After 3 months, the flavor will begin to weaken, so increase the amount you use in recipes.
